Sustainable Food Curriculum Guide

Elementary, Middle

Description

This resource highlights ways students can make more sustainable food choices. It provides background information and additional resources for teachers, along with classroom activities and action ideas to help students adopt a more sustainable lifestyle. The resource focuses on four key sustainable food choices, offering support for both teaching and student action:

  • Plant-Based Diet: The guide emphasizes the environmental benefits of reducing meat consumption, showing how plant-based diets can lower carbon footprints and reduce strain on ecosystems.
  • Choosing Local and Seasonal Foods: By encouraging the purchase of locally grown and seasonal produce, the guide supports regional economies and reduces the carbon footprint associated with long-distance food transport.
  • Organic Food: The guide highlights the importance of organic foods in a sustainable diet, encouraging choices that are better for the environment and human health.
  • Reducing Food Waste: Strategies are provided to minimize food waste, including proper food storage, meal planning, and creative uses for leftovers, helping conserve resources and reduce methane emissions from landfills.

The guide also includes classroom activities to raise awareness and inspire action toward sustainable food practices. Examples include:

  • Home Food Waste Audit: Tracking the amount and types of food wasted over a week to understand consumption patterns and identify areas for reduction.
  • Nutritional Comparison: Comparing the nutritional values of various protein sources, such as meat and plant-based alternatives.
  • Community Mapping: Mapping the local community to identify sources of sustainable food, such as farmers’ markets, community gardens, and local farms.
  • Composting Program: Setting up compost bins, learning composting processes, and using the compost to fertilize school gardens.
As an introduction to the guide, students can view the highlight reel featuring students sharing their tips on how to tackle food waste.

General Assessment

Recommendation of how and where to use it

The activities in the resource are designed to be adaptable for various educational settings and can be integrated into subjects such as science, math, and social studies. By engaging in these practices, students can contribute to mitigating climate change, preserving biodiversity, and promoting environmental equity.
